Pumpkin Chocolate Chip Cookies

2 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
1 (15 oz) can pumpkin
4 cups flour
4 tsp baking powder
1 tsp baking soda
1 tsp salt
4 tsp cinnamon
1 (12 oz) bag semi-sweet chocolate chips

Preheat oven to 375 degF. Mix eggs, oil, sugar, vanilla and pumpkin. Sift together flour, baking powder, baking soda, salt and cinnamon. Add to egg mixture. Stir in chocolate chips. Drop on to ungreased cookie sheet and bake 10-12 min. Makes at least 6 dozen.

Notes
  • Cookies will be very soft and cannot be stacked when cooled - I put them in a container standing on their edge, leaning together like dominos
  • We always throw in an extra 1/2 bag of chocolate chips or even cinnamon chips
  • This makes a TON of cookies! They are perfect if you have to bring treats for a lot of people - we've taken them to Seminary, Thanksgiving dinner and even a ward potluck! Everyone loves them! They really taste like the season!
  • Oh ya, PS, they are NOT healthy at all (except for maybe the pumpkin), so do not make them if you're trying to lose weight, cause you'll get addicted and eat a dozen in one sitting - I know from all too personal experience!
